Freshness
|
The freshness of artisan ice cream, which is prepared daily with the highest quality ingredients such as pasteurized milk, fresh fruit, cream and eggs. The production machinery allows to fabricate smaller batches and we are able to always serve freshly made ice cream. | On the other hand, industrial ice cream is prepared by an industrial process which provides for the production of large quantities of a product, which is then packaged and distributed at points of sale with a product duration of several months. |
Fats | Total absence of fat ( for example in fruit ice cream), fat content up to 4-5% for creamy ice creams. (fat found in milk). | In industrial ice cream the fat content is very variable, ranging from 7% to 18% in premium ice creams. Vegetable fats (low quality). |
Composition | Sugar, natural fruit, cocoa, nuts, milk... | Sugar, aromas, colourings. In rare occasions, natural fruit. |
Creaminess | Artisan ice cream machines add only 30-40% of air. The texture is creamy on the palate. | The large industrial machines however introduce high amounts of air, adding up 100% of air. The texture on the palate is earthy. |
